Estate Pinot Noir Sparkling Brut Rosé
Following good winter rains very warm and dry conditions prevailed during the 2014/2015 growing season, leading to an earlier than average harvest. Nevertheless the cool nights experienced high in the Piccadilly Valley (570-585m) ensured the Pinot Noir grapes grown on the south facing slope had excellent acid and flavour balance at harvest. This ensured that the wine has a wonderful natural crisp acidity, essential to sparkling wine structure.
Fruit was harvested on the 11th and 15th February 2015 and whole cluster pressed juice was fermented, for the first time, with a new hybrid yeast developed by the AWRI to add to flavour and textural complexity. Analysis revealed alcohol at 12.0% Alc/Vol, pH 3.10, while titratable acidity at 7.5g/L.
This wine owes it unique, complex flavor profile to the time honoured, traditional, bottle fermentation process methode traditionelle. The wine was disgorged after 2 years on yeast in bottle. Low dosage has been used to give this wine a fresh, crisp but luscious brut style.
The wine displays a complex strawberry, green apple, citrus and subtle brioche aroma and a luscious, creamy, crisp, dry, lingering finish with fine persistent bead.

Greenhill Wines and their 20 year old predominantly Pinot Noir vineyard is located high on the western rim of the Piccadilly valley, just below 600 metres. Situated on an ancient ridge of clay and mudstone this site has two major water sheds and offers three aspects that enable the vines to deliver fruit for sparkling and still wines from a single vineyard site.
Winemaker Paul Henschke, famous worldwide for his work and study into yeast cultures and their interplay in fermentation, meticulously produces a variety of cool climate varietals some of which are available through Appointed Wines and also through his cellar door.
