Parish Hill 2015
Nero d'Avola Amphora
Hand sequentially hand- picked into 20 kg crates between the middle and end of April 2015 with a final Be of 12.6 and pH of 3.32.
The grapes were crushed and destemmed with no additions and allowed to ferment with the wild vineyard yeast , plunging and three pump overs daily.
Part of the crush is fermented in terra- cotta Amphora and left on skins for two months before pressing. The component not fermented in Amphora is fermented in plastic vats and later aged in the Amphora until November with several rackings.
Malo Lactic fermentation was allowed to occur naturally after which minimal Sulphur is added. The wine is bottled unfined and unfiltered after blending the components in November.
Nero d’Avola is a premium red grape from Sicily. Made in terracotta Amphora. Medium bodied ruby red with funky spicy aromatics, liquorice and violets. Silky ripe fleshy tannins and a persistent clean finish.

Established in 1998 the vineyard produces highly acclaimed Australian Wines from Italian Vines at Uraidla in the Piccadilly Valley in the Adelaide Hills South Australia.
In 2001 a visit from Dr Alberto Antonini, consultant wine maker and viticulturalist, confirmed the suitability of the site for the varieties that were planned to be planted. Since then many Italian varieties have been grown and as they mature the wines have reflected the unique terroir.
Parish Hill Wines produces varieties which include Vermentino, Prosecco, Moscato-Giallo, Dolcetto, Lambrusco Maestri, Sangiovese and Brachetto.
